The Best Beet and Berry Smoothie

Beets are one of those vegetables that everyone either loves or hates. If you’re nervous about trying beets, this is a great way to ease into eating them and get used to their delicious earthy flavor. See notes below for how to cook a fresh beet, as fresh beets tend to taste much better than canned!
Serves 1

Ingredients
1 medium beet, cooked and cooled*
Beet greens (optional)
1 medium banana, frozen
½ cup berries, frozen
1 cup coconut water
Directions
Add ingredients to a blender and blend until smooth.
Note: Using frozen fruit will yield a creamier texture, but you can also use fruit at room temperature and then add ice as desired.
*1 cup of canned beets can be substituted for the fresh beet if desired.
To cook a fresh beet, place the beet(s) in a medium saucepan, add enough water to cover, and bring to a boil. Cook on medium heat for 45–60 minutes, or until the skins can be rubbed off with your fingers. To test one, fish it out of the pot with a pair of tongs and run it under cold water until it’s cool enough to handle. Let cool in the refrigerator before using in the smoothie.
